“FRIED” CHICKEN AND SWEET POTATO FRIES
INGREDIENTS:
“FRIED” CHICKEN
- 6 oz chicken breast tenders (raw)
- 1 egg white
- 1T water
- 1 tsp coconut oil, melted
- 1/3 c Fiber One cereal
- Pinch of black pepper, paprika, salt (optional) to taste
SWEET POTATO FRIES
- 4 oz yam – sliced lengthwise into ¼” thick strips
- 1 tsp olive oil
- 1T water
- Pinch of salt and/or cinnamon (optional) to taste
HOW TO PREPARE:
FRIED CHICKEN
1. Blend fiber cereal & spices in food processor.
2. Pour blended mixture into Ziploc bag – set aside.
3. Whisk egg whites, oil, and water.
4. Dip chicken in egg mixture and then place into the bag.
5. Seal bag and shake to coat evenly.
6. Place chicken on baking sheet coated with cooking spray and set aside.*
SWEET POTATO FRIES
1. Put yams, oil and water in Ziploc bag and shake to coat evenly.
2. Arrange flat on baking sheet next to chicken.*
*Bake chicken and fries in oven at 375 for 25-30 min (or until deep golden brown) – turning 1x halfway during cooking.

I was just asked this question again, so I thought I’d post about it again, as it seems to be a pretty common question:
When it comes to getting in shape, what should I focus on first…. losing weight or building muscle?
Build muscle! Here’s why…. the more muscle you have on your frame, the faster your metabolism will be and the more calories you will burn JUST BY BEING ALIVE… NOT DOING ANYTHING! Muscle burns approximately 3x as many calories as the same amount of fat. So with that increased metabolism, it will become a whole heck-of-a-lot easier to lose excess body fat, because you will be burning a lot more calories even when you’re not exercising! With a faster metabolism, that also means you will be able to eat more without having to worry about “getting fat”.. this will make it easier to stick to… and more likely to become a LIFESTYLE.
Many girls falsely believe doing hours of cardio and starving themselves will result in fat loss. The weight they are ACTUALLY losing is water and lean muscle. Loss of lean muscle mass will result in a “skinny fat” look and a slowed metabolism. Once that occurs, it becomes MUCH more likely that the body will store fat! Here is what I suggest… if you are looking to “tone up” and lose body fat, begin by cleaning up your diet and lifting weights. Add in cardio about 3x a week (you can increase this as you become more in-shape). Also, make sure you are drinking plenty of water and getting enough sleep. Remember to be patient! It takes TIME and hard work.. but if you remain positive, you will get there! =)

Moist, Low-Calorie Microwave Protein Fudge Muffins
Ingredients:
- 2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
- 1/4 cup pumpkin (3 T applesauce or other starchy carb works well too!)
- 2 T coconut flour* (1 T also works, and results in 40 fewer calories)
- 1/2 tsp baking powder
- stevia or other granular sweetener to taste
- 1 T. cocoa powder (Hershey’s Special dark cocoa is best!)
Directions:
Spray a soup bowl with a very light layer of oil to prevent sticking (not even necessary but makes cleaning up a bit easier). Mix ingredients well with fork, whisk or spatula. Microwave for 2:30-4+ min on High (depends on your microwave, altitude and the whim of the cupcake gods.)
Makes one HUGE serving. 155 calories **; 12 g protein; 16.5g carb; 4.5g fiber; 1.75g fat Stellar stats.
